This is a recipe that goes around. We got it from our friend, who got it from her friend. This pie is so good that everyone loves it! Luckily it's also very BIG!

RHUBARB PIE WITH QUARK
Crumb mix
8 dl flour
3 dl sugar
2 teaspoons baking powder
2 teaspoons baking soda
3 teaspoons vanilla sugar
250 g melted butter
Crust
2/3 of crumb mix
2 dl sour milk (piimä / kefir)
1 egg
3 dl sugar
2 teaspoons baking powder
2 teaspoons baking soda

Filling
1l rhubarb (+ raspberry / other berries)
500 g quark
2 dl sugar
2 eggs
3 teaspoons vanilla sugar
On top: 1/3 of crumb mix
1. Mix crumb mix's dry ingredients, add melted butter last. Separate in 2 bowls 2/3 for crust (bottom) and 1/3 for topping. (We put little less for topping.)
2. To crust mix, add sour milk and egg. Mix well. Spread on a bread baking tray. (We used lasagne casserole, but it was almost too small.)
3. On the crust, spread rhubarb and other berries etc.
4. Mix quark, sugar, eggs and vanilla sugar in a bowl. Spread on top of the rhubarb. (Or mix everything with rhubarb and then pour on the crust.)
5. Last spread the rest of crump mix.
6. Bake in oven, 175 C for about 45 minutes. Serve warm or at room temperature.
